Breakfast Sliders (no b.s. here, just deliciousness!)

I love Kings Hawaiian style rolls, particularly to make sandwhiches with. I also like baking “egg muffins” in a muffin pan. Thinking those two would be about the same size, I had the idea to combine the two into a breakfast slider!!

In particular, I thought this would be a great dish for a post run tailgate party – something small that could be held in one hand and eaten easily. Also something hearty (hash browns) with some flavor variety (red onion & taco seasoning)

Does this have to be served immediately after cooking? Or can this dish be kept & keep warm to serve after cooking?

This dish can do either! if you wrap each slider in aluminum foil and place into an insulated container (a cooler without ice in it), the sliders can be kept warm for a few hours. Helpful when taking for a tailgate party after a Saturday long run!

Can any of this be prepped ahead of time? (say, the night before a Saturday morning long run)?

Yes! The egg mixes can be baked in the oven ahead of time, refrigerated overnight, then put back in the oven for a few minutes the next day to reheat, saving some prep time that day

Preparation

  1. Turn oven onto 375 degrees
  2. Crack one egg, and add to small bowl
  3. Add small handful of cheese, diced onions & 1 tablespoon taco seasoning to small bowl and whisk all contents together
  4. Pour Mixture into one muffin pan slot
  5. Repeat the above steps to make 3 more mixes, to fill 3 more muffin pan slots
  6. Lay out 4 hash browns on a parchment paper lined baking sheet
  7. Use a knife to slice open the rolls

Cooking

  1. Place muffin pan and baking sheet into oven
  2. Hash Browns need to cook for 20 minutes, turning over halfway during cooking time
  3. Egg mixtures in muffin pan need to cook for 15 minutes
  4. When times are up, remove each from the oven. Allow to cool for a few minutes.
    The egg mixes may bubble up in the oven. Allowing them to cool for a few minutes out of the oven will cause the bubbles to go down

Assembling the sliders

  1. To start, lay the hash browns on one piece of the bread
  2. Next add the cooked egg mix and spinach on top of the hash brown
  3. Add the top piece of bread & use a toothpick to press down & hold the sliders together
  4. Place assembled sliders back in the oven for 5 minutes. This will make the bread just a bit crispy
  5. Remove from oven. Either enjoy immediately or wrap in foil to enjoy later the same day
