If you're looking for a unique take on pizza that's hearty, sweet, and always a treat, then look no further than this dish - Barbecue Chicken Pita Pizzas!
Like other pizza dishes of mine, such as Veggie Lovers Pizzas or Hawaiian Barbecue Pizzas, this dish uses a whole wheat pita as it's crust. Topping the crust is Barbecue Sauce, Shredded Cheddar Cheese, Chicken, Green Onions, Tomato, and Basil - a unique and delicious combo of flavors!
For the Chicken I would reccommend buying a Rotesserie Chicken and then shredding/dicing it. For the Barbecue sauce, it's best to go with one that is ligher, smoother, and sweeter. I like using either Head Country Original Barbecue Sauce or Great Value Honey Barbecue Sauce.
Pro Tip: Cook the pizzas on a pizza stone in your oven and they'll be nice & crispy - closer to restaurant quality

Does this have to be served immediately after cooking? Or can this dish be kept & keep warm for a short while to serve after cooking?
This dish can do both! If you wrap each slice of pita pizza in aluminum foil and place into an insulated container, the pizzas can be kept warm for a few hours.
Can any of this be prepped ahead of time? (say, the night before a Saturday morning long run)?
You can dice the green onions & tomatoes, and shred the chicken the night before making the pizzas. Then the next day, all you will need to do is, pull everything out of the refrigerator, assemble the pizzas with all the toppings, cook, and enjoy!
