This is a dish I made for a Chistmas potluck at my office. On the potluck sign up sheet, I'd seen most everyone signed up to bring something sweet or meaty. While they all sounded absolutely delicious, I decided I'd make & bring something veggie, yet still savory to do something different. Also, who doesn't love nachos?!
This recipe uses tostada shells as the "chips", and once assembled, are baked in an oven rather than the ingredients cooked and added on top of a bed of tortilla chips. This way, they are less messy.

Something to know about White Cheddar Cheese - as it melts, it will melt transparent. Don't leave it in the oven for too long. My original plan for this dish was to make the tostada nachos in the shape of a snowman, but saw that the white cheddar on top didn't stay white as it melted, showing the toppings underneath
Does this have to be served immediately after cooking? Or can this dish be kept & keep warm to serve after cooking?
These are best served warm, right after cooking. Otherwise, they'll start to cool. However, than can be re heated in the oven very easily.Can any of this be prepped ahead of time?
To save time, you can cook the Veggie Griller Crumbles & shred the White Cheddar Cheese the day before. That way, when you're ready to bake the nachos, you can simply pull out the ingredients, assemble, and bake!
