Easy Chorizo Breakfast burritos

Looking for an easy, tasty and awesome delicious breakfast? Than you should definitely check out these Easy Chorizo Breakfast burritos! These make for a great combination of savory, hearty, & creamy flavors, that fills you up, but doesn't overfill. My friends and I enjoyed these after an 8 mile long run on a Saturday recently.

Wrapped up in a tortilla are just these 5 ingredients

For the Chorizo, I like to use MorningStar Farms Plant Based Chorizo Crumbles. The crumbles only take a few mins to cook in a skillet with water added, and come out absolutely delicous! For Vegan Cheese and Sour Cream, I really like the brand Violife. Both have great tastes!

Does this have to be served immediately after cooking? Or can this dish be kept & keep warm for a short while after cooking?

This dish can do both! If you wrap each burrito in foil and store in an insulated container, the burritos will keep warm for a short while. Definitely great to be able to enjoy after a long run on a Saturday!

Can any of this be prepped ahead of time? (say, the night before a long run or other type of event)?

The Chorizo and Hash browns are best cooked the day of the event, then assembled into burritos with the rest of the ingredients.

    Grocery Ingredients Needed
  • 8 Flour Tortillas
  • 1 Bag Plant Based Chorizo
  • 1 Bag Plant Based Cheddar Cheese
  • 1 Package Vegan Sour Cream
  • 1 Bag Hash Brown mix (1 bag)
  • 2 cups Guacamole
  • Kitchen Tools Needed
  • 2 Skillet (one for chrorizo, one for hash browns)
  • Slicing Wheel or Chefs Knife
Instructions
    Cooking the Chorizo
  1. Place skillet on stove top burner & turn heat onto medium high
  2. Add Plant Based Chorizo Crumbles to skillet and cook for length reccommended on package
  3. Cooking the Hash Browns
  4. Place skillet onto stove and turn burner onto medium high heat
  5. Add 2 tablespoons of olive oil to skillet
  6. Add bag of hash brown mix to skillet & cook for 25 minutes or until golden brown
  7. Assembling the Burritos
  8. Begin by spreading out 1/2 cup of Plant Based Chorizo crumbles onto a tortilla
  9. Next, add 1/4 cup of Plant Based Cheddar Cheese
  10. Next, add a spoonful of Vegan Sour Cream
  11. Next, add a spoonful of guacamole
  12. Lastly, add hash brown mix
  13. Fold & roll the tortillas into a burrito & enjoy!Easy Chorizo Breakfast burritos
