Who doesn’t love Funnel Cakes when going to a State Fair? I know it’s always a favorite of mine when I go!
I had the idea to make this for a Saturday long run this month (October) whose course was going to take us near to the fairgrounds in Tulsa, where the Tulsa State Fair was going on. It turned out excellent! It was a great treat after a long run on a bright, but just so slightly chill morning!
While there is some technique involved in shaping the funnel cakes, what you might not know is that you probably have all the ingredients at home right now to make this dish. You’ll definitely be a hero if you bring a homemade batch of these to a tail gate party!
Fun Run Funnel Cakes (Favorite State Fair Dish!)

First, turn on your stove to begin heating the oil in the Wok or Saucepan. This will be going on while you're prepping the rest of the ingredients

Combine the dry ingredients (flour, baking powder, granulated sugar, and salt) into the large mixing bowl

Combine the wet ingredients (egg, milk, maple extract) into the small mixing bowl and whisk

Add the wet ingredients to the dry ingredients and whisk together. The mix needs to thicken some, but still be liquid enough move (think Milkshake thickness)

Prepare the piping bag by cutting the bottom end slightly, so that a nozzle can be dropped in the bag, and will peek slightly out thru the bottom of the bag

Using the ladle, add mix to piping bag (2 or 3 scoop fulls). Leave yourself room to twist piping bag closed at the top

By this time, the oil in the Wok should be ready to go! Hold the piping bag over the oil and squeeze the top to start pushing the mix out the bottom. Pipe the mix out in a few small circles, crisscrossing to connect them

The Funnel Cakes should only take a couple of minutes to cook. As they start to harden, flip them over so they cook evenly

When they turn a light golden brown, it's time to remove them

Remove the funnel cakes from the oil and place on a paper towel to drain. Sprinkle some powdered sugar on top of them

You've now got some delicious funnel cakes! Either enjoy them immediately, or wrap in foil to enjoy a bit later the same day
