Hawaiian Barbecue Pita Pizzas (Merry Christmas!)

It's Christmas time at last! I hope everyone reading this is enjoying the holiday weekend gathered with their loved ones. No gathering is complete without food to share, whether it's baked, grilled, fried or any other way! If you're interested in a unique shareable, look no further than these - Hawaiian Barbecue Pita Pizzas!

Backstory - My family likes to vary our dining theme for Christmas gatherings year to year. For example, one year might be Italian with Pasta Primavera, whereas the next might be Asian with Lo Mein & Orange Chicken. This Christmas though, my parents (who host our family gathering) decided to go with a Hawaiian Theme, inspired by a trip they had taken earlier this year. In particular, the meal was going to feature pineapple. Each of us was asked to bring a dish for the meal

My contribution was Hawaiian Barbecue Pita Pizzas that, of course, would be featuring pineapple! In addition to pineapple, this recipe uses barbecue sauce, ham, bacon bits, & sliced red onions

Something else that makes this unique is that it uses Pita bread as the crust. If you don't feel like making dough from scratch or you don't like store bought pizza crusts (my case), using pita bread can be a great alternative!

Does this have to be served immediately after cooking? Or can this dish be kept & keep warm to serve after cooking?

This dish can do either! If you wrap each pizza slice in aluminum foil and place into an insulated container (a cooler without ice in it), the pizza slices can be kept warm for a few hours. Helpful when taking to a tailgate party after a Saturday long run

Can any of this be prepped ahead of time? (say, the night before a Saturday morning long run)?

Yes! You can assemble the pita pizzas the night before, store them in the refrigerator, and then cook in the oven the next day!

  • 1 Whole Wheat Pita
  • 2 tablespoons Barbecue Sauce
  • 1 cup Mozzarella Cheese (shredded)
  • .25 cups Cheddar Cheese (shredded)
  • .5 cups Pineapple Tidbits
  • .25 cups Red Onion (sliced)
  • 1 tablespoon Cilantro
  • .5 cups ham slices
  • .5 cups Bacon bits
  • Kitchen Tools Needed
  • Pizza Stone or Large Baking Sheet
  • Slicing Wheel
  • Serrated Knife

    Getting Started
  1. Use the serrated knife to slice the red onion
  2. Preheat oven to 400 degrees
  3. Assembling the Pita Pizzas
  4. Begin by spooning 2 tablespoons of barbecue sauce along the top of the pitaPitas with barbecue sauce
  5. Next, add 1/2 cup of mozzarella cheeseMozzarella cheese on pita pizzas
  6. Next, add 1/2 cup of ham slicesHam slices on top of pita pizzas
  7. Next, add the 1/4 cup of red onion and 1/2 cup of pineappleRed onion & pineapple on pita pizzas
  8. Next, add the 1/2 cup bacon bitsBacon bits on top of pita pizzas
  9. Lastly, add 1/2 cup more of shredded mozzarella cheese, as well as 1/4 cup shredded cheddar cheeseMozzarella & cheddar cheese on pita pizzas
  10. Cooking & Garnishing
  11. Place Pita Pizza in the oven & cook for 10 minutes or until cheese meltsPita pizzas cooking in oven
