If you’re looking for a more unique recipe for tacos, look no further. These flavors combine to make awesome Kimchi Soft Tacos!
For those who might not know, Kimchi is a type of fermented cabbage, common among Korean dishes. It’s becoming more and more available in various grocery stores, including even Target and Walmart
I first discovered Kimchi while dining at a few Asian Fusion restaurants here in Tulsa. I’ve also discovered that while it is quite tasty on it’s own, it’s even more delicious when paired with hash browns, cheese & sweet chili sauce.
Does this have to be served immediately after cooking? Or can this dish be kept & keep warm for a while to serve after cooking?
This dish can do either! If you wrap each soft taco in aluminum foil and place into an insulated container (a cooler without ice in it), the tacos can be kept warm for a few hours. Helpful when taking to a tailgate party after a Saturday long run!
Can any of this be prepped ahead of time? (say, the night before a Saturday morning long run)?
This one is best cooked just before serving. Fortunately the hash browns and kimchi do not take long to cook

Getting Started

Add 3 tablespoons of Vegetable Oil to Wok and turn stove top heat to medium high

Add Hash browns to Wok and cook until golden brown

Remove cooked hash browns from Wok and place in bowl. Cover bowl with lid to contain heat

next, add Kimchi to Wok and cook for 5 minutes

Once cooked, remove Kimchi from wok and place into 2nd bowl.
Assembling the Soft Tacos

On each flour tortilla, add 1/2 cup of Kimchi

Next, add 1/2 cup of hash browns to each taco

Next, add 1/2 cup of shredded sharp cheddar cheese to each taco

Lastly, add 1 tablespoon of Cilantro to each taco

You now have some amazing & delicious Kimchi Soft Tacos! Add some Sweet Chili Sauce as a topping and enjoy!
