For those who might not know, Kimchi is a type of fermented cabbage, common among Korean dishes. It's becoming more and more available in various grocery stores, including even Target and Walmart
I first discovered Kimchi while dining at a few Asian Fusion restaurants here in Tulsa. I've also discovered that while it is quite tasty on it's own, it's even more delicious when paired with hash browns, cheese & sweet chili sauce.
Does this have to be served immediately after cooking? Or can this dish be kept & keep warm for a while to serve after cooking?
This dish can do either! If you wrap each soft taco in aluminum foil and place into an insulated container (a cooler without ice in it), the tacos can be kept warm for a few hours. Helpful when taking to a tailgate party after a Saturday long run!
Can any of this be prepped ahead of time? (say, the night before a Saturday morning long run)?
This one is best cooked just before serving. Fortunately the hash browns and kimchi do not take long to cook
