Not Your Average Breakfast Quesadillas

If you’re looking for a way to change up making breakfast quesadillas, then here is a not-your-average breakfast quesadilla in a unique wrap – sun dried tomato tortillas!

This dish uses scrambled eggs, cooked with basil and Trader Joes Everything But the Bagel Seasoning.  The eggs are then assembled with shredded sharp cheddar cheese and fine diced tomatoes & wrapped in sun dried tomato tortilla wraps from Aldi. Talk about a unique flavor combination!

When I scramble eggs for a dish like this, I like to leave them a bit moist, cooking on high heat for 2-3 mins, then removing and adding to a bowl.  I also like to use a dicing tool to both shred a block of sharp cheddar cheese as well as fine dice a couple of roma tomatoes.  For cooking this dish, I like to use a ribbed skillet so that the quesadillas have grill marks on them.

These ingredients, plus the seasonings, wrapped in this type of wrap, give these quesadillas a Mediterranean flavor – tomato & basil, plus light, sweet, and cheesy.  Perfect for a post run tailgate, springtime brunch, or any other warm weather gathering!

If you need to make some modifications to the ingredients to this dish, others you could add that would bring out unique flavors would be

-diced purple onions

-diced hash browns

-red or green peppers

Does this have to be served immediately after cooking? Or can this dish be kept & keep warm for a while to serve after cooking?

This dish can do either! If you wrap each quesadilla in aluminum foil and place into an insulated container, the quesadillas can be kept warm for a few hours.

Can any of this be prepped ahead of time? (say, the night before a Saturday morning long run)?

This dish is best made in one effort - fortunately it only takes a few minutes to make!

  • 2 Sun Dried Tomato Tortilla Wraps
  • 8 Eggs
  • 2 tbsp Basil
  • 2 tbsp Everything But The Bagel Seasoning
  • .5 cup Roma Tomatoes (diced)
  • 1 cup Sharp Cheddar Cheese (shredded)
  • Kitchen Tools Needed
  • 2 Skillets (1 to scramble eggs. 1 to cook quesadillas)
  • 1 small bowl (for eggs after scrambling)
  • 1 Dicing tool or serrated knife (for dicing tomatoes)
Instructions
    Getting Started
  1. use a dicing tool or serrated knife to dice Roma Tomatoes
  2. use a shredding or grating tool to shred Sharp Cheddar Cheese
  3. in a large skillet, scramble 8 eggs, seasoned with basil and Everything but the Bagel seasoning on high heat for 2-3 mins.
  4. remove eggs from skillet and add to bowl
  5. Assembling and Cooking the Quesadillas
  6. on a sun dried tomato wrap, add shredded Sharp Cheddar cheese to 1 side of tortillashredded cheese on top on sun dried tomato wrap
  7. add scrambled eggs on top of cheeseeggs & shredded cheese on top on sun dried tomato wrap
  8. add diced tomatoes on top of scrambled eggseggs, tomatoes, and cheese on top on sun dried tomato wrap
  9. add another layer of shredded cheese to finish layeringeggs, cheese, tomatoes, and a top layer of cheese on top on sun dried tomato wrap
  10. fold tortilla
  11. cook quesadillas on skillet for 2 minutes on each side, then flip over
