Happy New Year to all! I hope everyone reading this had a wonderful holiday season, spent with loved ones. With the beginning of a new year, many make a resolution to be healthier in various ways. If you’re interested in trying a plant based dish that’s definitely NOT lacking for flavor, I’d highly recommend trying out these Plant Based Chorizo Burritos!

Does this have to be served immediately after cooking? Or can this dish be kept & keep warm to serve after cooking?
This dish can do either! if you wrap each burrito in aluminum foil and place into an insulated container (a cooler without ice in it), the burritos can be kept warm for a few hours. Helpful when taking for a tailgate party after a Saturday long run!
Can any of this be prepped ahead of time? (say, the night before a Saturday morning long run)?
Yes! You can scramble the eggs in a skillet the night before your event, refrigerate them overnight, and then reheat them once again on a stovetop the day of the gathering to save some time that day.
I’ll say though that my personal preference when scrambling eggs is to leave them just a little moist, so I prefer to cook them the day of/morning of the gathering I’m taking them to.

Plant Based Chorizo Burritos

Getting Started

Add the Chorizo and 1 cup water to the skillet and heat on medium high for 8 minutes

Add 8 eggs to a bowl, along with Southwest Seasoning, and mix

With the Chorizo still in the skillet, add the egg mix & scramble
Assembling the Burritos

Begin assembling the burritos by adding the chorizo/egg mix on top of the tortilla

Next, add the diced tomato & diced green onion
-
Next, add the Plant Based Cheddar Cheeze
-
fold and roll the tortilla & mix into a burrito with both ends closed

Place wrapped burritos back onto skillet for 3 mins each, to brown the outsides

Remove burritos from skillet and either serve immediately or wrap in aluminum foil to serve later that day
