Practically Perfect Pita Pizza (Chicken Caesar)

Believe it or not, this pizza dish is one I learned to make when I worked as a sandwich artist at McAlisters Deli! I had this manager who could make these amazing cullinary combinations & the most popular one was the Chicken Caesar Pizza. I learned how to make it myself and have, over the years, put my own spin on it.

Over the last couple of years, I've come to greatly enjoy cooking homemade pizzas using a Pizza Stone. They can make the crusts crispier and so much closer to restaurant quality!

Also, when making homemade pizzas, I've never found a grocery store premade pizza crust that I liked, but I've always liked using Pita Bread (no pockets) as a crust.

This recipe calls for both Mozzarella and Provolone Cheeses. However, Walmart has an Italian Style shredded cheese mix that contains both, that I often will use

Does this have to be served immediately after cooking? Or can this dish be kept & keep warm to serve after cooking?

This dish can do either! if you wrap each pizza slice in aluminum foil and place into an insulated container (a cooler without ice in it), the pizza slices can be kept warm for a few hours. Helpful when taking for a tailgate party after a Saturday long run!

Can any of this be prepped ahead of time? (say, the night before a Saturday morning long run)?

Yes! You can assemble the pita pizzas the night before, store them in the refrigerator, and then cook in the oven the next day!

  • Whole Wheat Pita (no pockets)
  • 2 tablespoons Caesar Dressing
  • 1 cup Mozzarella Cheese (shredded)
  • .5 cups Chicken Breast (Diced)
  • .25 cups Green Onion (Diced)
  • .25 cups Roma Tomato (Diced)
  • .25 cups Mushroom
  • .25 cups Feta Cheese
  • .25 cups Provolone Cheese (shredded)
  • 1 teaspoon Basil
  • .25 cups Olive Oil
  • .25 cups Balsalmic Vinegar
  • Kitchen Tools Needed
  • Chefs Knife
  • Cutting Board
  • Baking Sheet or Pizza Stone
  • Parchment Paper

Instructions
    Getting Started
  1. Preheat oven to 375 degrees
  2. Dice up the Chicken Breast, Green Onions, and Tomato
  3. In a skillet, sautee mushrooms using 1/4 cup olive oil & 1/4 cup balsalmic vinegarsauteed mushrooms
  4. Assembling the Pita Pizza
  5. Begin by spooning 2 tablespoons of Caesar dressing on the top of the pita. Spread it evenly and make sure it covers out to the edgesCaesar dressing on pita
  6. Next, sprinkle 1/2 cup of mozzarella cheese on top of the pitamozzarella cheese on pita
  7. Next, add 1/2 cup of diced chicken breast on top of the pitadiced chicken on pita
  8. Next, add 1/4 cup diced tomato, 1/4 cup diced green onion, and 1/4 cup mushrooms on top of the pitaveggies on top of pita
  9. Next, add 1/4 cup of feta cheese on top of the pitafeta on top of pita
  10. Next, add 1/2 cup of mozzarella cheese on top of the pitamozzarella cheese and basil on top of pita pizza mix
  11. Sprinkle 1 teaspoon of basil on top of the pita
  12. Lastly, use a spatula to press down on the pita pizza mixspatula pressing down on chicken caesar pizzas
  13. Cooking, Cooling, and Serving
  14. Place the assembled pita pizza on a parchment paper lined baking sheet or on a pizza stone, and load into your ovenchicken caesar pizza in the oven
  15. Cook the pita pizza for 12 minutes. You can see that it's ready when the mozzarella cheese has melted & spread, and the pita crust has darkened a bit.
  16. Remove the pita pizza from the oven and let cool for 3 minutes. Use the pizza cutting wheel to slice the pita pizza
  17. You now have a delicious, personal size Chicken Caesar Pita Pizza! Either enjoy immediately or wrap the slices in foil to enjoy later the same dayfully cooked chicken caesar pizza
