Shrimp & Pineapple Quesadillas

After a short hiatus, I’m back in the kitchen and back here on the blog! Part of my hiatus involved a business trip to the gulf coast of Florida. While I was there, I took the opportunity to eat as much seafood as possible. One restaurant in particular, had some very interesting combinations of seafood & fruits, wrapped up in tortillas in various ways. A combination of a couple of dishes gave me the idea to create Shrimp & Pineapple Quesadillas!

Once back home in Oklahoma, I wanted to try my hand at making my own version on the dish. It took a bit of experimenting on my part, but I was able to come up with something that’s sweet, savory & tangy all in one wrap. Even if you don’t happen to live near a cost, you can still enjoy a great seafood fusion dish!

To make things a bit easier, I decided to go with frozen, cooked shrimp that I would then thaw & dice. Once I diced the shrimp, I tossed it in a bowl with Trader Joes Citrus Garlic Seasoning and Vatsanas Citrus Sauce that I had picked up at the Oklahoma City Farmers Market a little while ago & was waiting for the right cooking occasion to use – this occasion was definitely it!

What Are Some Alternatives to the Pairings in this dish?

Does this have to be served immediately after cooking? Or can this dish be kept & keep warm for a while to serve after cooking?

This dish can do either! If you wrap each quesadilla in aluminum foil and place into an insulated container ( a cooler without ice in it), the quesadillas can be kept warm for a few hours. Helpful when taking to a tailgate party after a Saturday Morning Long Run!

Can any of this be prepped ahead of time? (say, the night before a Saturday morning long run)?

To save time the day of the event, you can thaw, dice, and season the shrimp the day before.

Getting Started

  1. Begin by thawing the shrimp as instructed on the package
  2. Once thawed, dice the shrimp using a dicing tool or chefs knife
  3. Next, toss in a bowl with Citrusy Garlic Seasoning & Citrus Sauce

Assembling the Quesadillas

  1. on each tortilla, add shredded sharp cheddar cheese to one half of the tortilla
  2. Next, add diced shrimp and Pineapple Tidbits
  3. Add more shredded sharp cheddar cheese
  4. fold the bare half of the tortilla on top of the loaded half

Cooking the Quesadillas

  1. Turn stove top burner on top medium high heat
  2. Place assembled quesadilla on to skillet and cook for 5 minutes, flipping quesadilla over until both sides have browned
  3. You now have some delicious coastal inspired Shrimp & Pineapple Quesadillas - enjoy!
