Truffle Barbecue Quesadillas

One Saturday, my girlfriend and I were galavanting around town, and our travels included a stop at Trader Joes. It was only my 2nd time to one, so as we were strolling the aisles, I was keeping an eye out for unique and interesting offerings. One in particular that caught my eye was Truffle Flavored Barbecue Sauce. I bought it, took it home & tried it, and LOVED IT! The sauce has a unique look and a very distinct taste. As I was thinking about dishes to use this with, one idea was to incorporate it into quesadillas!

In addition to the Truffle Flavored Barbecue Sauce, this dish also uses

  • Flour Tortillas
  • Cheddar Cheese (shredded)
  • Mushrooms (sauteed)
  • Green Onions (sliced)

Does this have to be served immediately after cooking? Or can this dish be kept & keep warm to serve after cooking?

This dish can do either! if you wrap each quesadilla in aluminum foil and place into an insulated container (a cooler without ice in it), the quesadilla can be kept warm for a few hours. Helpful when taking for a tailgate party after a Saturday long run!

Can any of this be prepped ahead of time? (say, the night before a Saturday morning long run)?

Yes! You can slice the cheese & the vegetables the night before. Then you can pull them out, combine, and cook the next day.

Getting Started

  1. Begin by spooning barbecue sauce onto the tortilla
  2. Next, add the shredded cheddar cheese to one half of the tortilla
  3. Next, add the mushroom & green onion
  4. Add another layer of shredded cheddar cheese
  5. Fold the empty tortilla half over the filled tortilla half

Cooking the Quesadillas

  1. Heat stove top to medium high heat & place assembled quesadilla on the skillet
  2. Cook for 3 minutes, or until browned on one side, then flip over
  3. Cook for another 3 minutes, or until browned on the other side, then remove from skillet
  4. You now have some unique and delicious Truffle Flavored Barbecue Quesadillas! Enjoy!
