If you’re looking for a unique, but quick take on pizza with no meat but ALL THE FLAVOR, then look no further than this dish – Veggie Lovers Pita Pizzas!

This dish combines a number of tasty veggies – Mushroom, Tomato, and Zucchini, on a whole wheat pita as the pizza crust, and Basil seasoning for extra flavor. I like using pitas as a pizza crust because it’s easy to find in most grocery stores, and easy to work with when crafting this dish

For this I would reccommend roasting the zucchini and mushrooms in a skillet first, before topping a pizza with them. Any extra roasted veggies that don’t make it to a pizza can be easily stored in the refrigerator & used for other dishes.

This dish can do both! If you wrap each slice of pita pizza in aluminum foil and place into an insulated container, the pizzas can be kept warm for a few hours.

Can any of this be prepped ahead of time? (say, the night before a Saturday morning long run)?

You can slice/dice and roast the veggies the night before making the pizzas, then pull the roasted veggies out of the refrigerator the next day, top your pizza and cook in the oven.

Instructions

Getting Started - the veggie toppings

  1. Using a Dicing Tool or a Chefs knife, dice cut the tomatoes and zucchini, and slice the mushrooms
  2. Add Olive Oil to skillet and roast the mushrooms and zucchini for 5 minutes or until softened
  3. Remove Mushrooms and Zucchini from skillet and place into small bowl - set bowl aside for now

Assembling the Pita Pizzas

  1. To begin, spoon 2 tablespoons of pizza sauce onto pita
  2. Next, add 1 / 2 cup of shredded Mozzarella cheese onto the pita
  3. Next, add Mushrooms, Zucchini, and Tomatoes
  4. Lastly, add another 1/2 cup of shredded Mozzarella to the top, and sprinkle wih Basil

Cooking the PIta PIzzas

  1. Turn oven onto 400 degrees
  2. Place assembled Pita Pizzas onto Pizza Stone or parchment paper lined baking sheet
  3. Cook pizzas for 12 minutes or until cheese melts
  4. Remove Pizzas from oven
  5. Let cook for 2 minutes, then slice and enjoy!!
